Laurina Coffee
Also known as Bourbon Pointu or Maragogipe Laurina, is a distinctive coffee varietal noted for its low caffeine content. It is a natural mutation of the Bourbon coffee plant, with Laurina coffee beans typically containing about half the caffeine of regular Arabica beans. This significant reduction in caffeine contributes to a smoother and milder taste, as caffeine is a primary source of bitterness and astringency in coffee.

Fermentation
Rigorous picking, with cherries colour purple-grape, with maturation Brix grades of 18. Fermentation is done for 36 hours.
Drying
Coffee is left for about 48 hours in a silo (temperature approx 35°C), it is then passed to solar dry for about 15 days.
