We are thrilled to introduce an exceptional lot from our partners at Café Granja La Esperanza: “Mokka Natural.” This rare variety showcases the dedication and craftsmanship of SPIRITHUB ROASTERY in selecting the finest coffee. Mokka, an ancient variety from Yemen named after the port of Mokha, produces very small cherries and seeds, making it commercially non-viable but offering an intriguing and complex flavour profile.

Our rigorous picking process ensures only the best cherries, characterized by their purple grape colour. The cherries must have Brix grades between 17 and 18 to ensure optimal juice content for fermentation. Fermentation lasts 48 hours in open-air special barrels, with temperatures maintained between 25° – 28°C, checked every 10 hours. The drying process involves leaving the coffee in a silo at approximately 35°C for about 48 hours before solar drying for around 15 days.
