Since 2021, Spirithub Roastery has proudly committed to sourcing some of the finest and cleanest Kenyan coffees. Traditionally celebrated for their vibrant, washed profiles marked by crisp acidity and bright fruitiness, Kenya is now beginning to reveal another side — the rise of naturally processed coffees, offering deeper, richer, and even more intriguing flavor experiences.
We are thrilled to introduce Matunda, our very first naturally processed Kenyan coffee — a project born out of our vision to bring something bold, new, and exciting to our community of coffee lovers.
About the Coffee:
Matunda comes from Mara Estate, produced through a close collaboration with several large Kenyan estates to create naturally processed lots on a larger scale — a rare and ambitious project for Kenyan coffee. Every season, Matunda will evolve, sourced from estates that demonstrate the ability to consistently produce high-quality naturals.
The journey begins with meticulous cherry selection at the farm level. Trained pickers ensure only the ripest cherries are harvested. Additional hand-sorting is performed before processing to guarantee uniform ripeness and quality.
Once selected, the cherries undergo a careful four-day fermentation in sealed barrels to intensify sweetness and complexity. After fermentation, the coffee is sun-dried on raised beds for approximately two to three weeks. During the hottest midday hours and overnight, the cherries are covered to protect them from harsh elements, preserving the integrity of the fruit. Constant monitoring and further hand-sorting throughout the drying process help eliminate any defective cherries, ensuring the final cup is clean, vibrant, and expressive.

Bursting with dense, syrupy fruit flavors — think ripe berries, plum jam, and stonefruit compote — Matunda offers a rich, velvety mouthfeel with a beautifully moist texture. Its sweetness is intense yet refined, balanced by a lively, juicy acidity that still pays homage to Kenya’s classic flavor identity.
