From the ancient coffee lands of Yemen, Spirithub Roastery proudly introduces Yemen Odaini Coffee Anaerobic Natural — a rare and meticulously crafted coffee that captures the authentic soul of Yemeni terroir with a modern twist in processing.
Harvested from the fertile farms of western Haraz at elevations around 2,000 meters above sea level, this coffee embodies centuries of tradition enhanced by innovative techniques. The cherries are sourced from smallholder farmers whose lands benefit from rich volcanic soil and a unique highland microclimate, allowing the coffee to develop incredible depth and complexity.
Processing Journey:
This lot undergoes an anaerobic natural process designed to accentuate the coffee’s fruitiness, body, and aromatic richness. Only the ripest cherries are hand-selected, ensuring a high Brix content for optimal fermentation. The cherries are then sealed in air-insulated fermentation barrels, creating an oxygen-free environment where natural yeasts and controlled temperature (maintained between 25°C and 28°C) drive a slow, rich fermentation over seven days.
Following fermentation, the coffee is initially sun-dried for four days to capture traditional Yemeni depth, then continues drying naturally over approximately 20 additional days to stabilise and lock in its vibrant character. Strict monitoring and gradual moisture reduction help preserve delicate flavours and ensure consistency.
Once dried, the coffee is blended and fine-tuned in specialised warehouses, then hulled using advanced Brazilian coffee peeling equipment. Final hand-sorting and laser sorting remove any imperfections, resulting in a clean, premium-grade product.

Expect an intensely aromatic cup with lush notes of ripe tropical fruits, sweet berries, honey, and hints of warming spices. The body is velvety and full, with a deep, wine-like acidity and a lingering, elegant finish that speaks to the coffee’s unique fermentation journey.
